RSL’s Commercial Refrigeration Repair and Maintenance
There are many different types of business when it comes to the service of drinks, make yours the step above the rest.
As a RSL, to help stay profitable and keep your business running all year long, it is important that your refrigeration and air conditioning is kept in a good state of repair, as defective and poorly maintained equipment can result in serious food contamination risks. Doing this will also help your business comply with Food safety and local council requirements.
DID YOU KNOW?
“The temperature range between 5°C and 60°C is known as Temperature Danger Zone for Food. This is because in this zone food poisoning bacteria can grow to unsafe levels that can make you sick.”
Remember – Keeping cold food cold
Keep your fridge below 5°C. At these temperatures, most food poisoning bacteria stop growing or they grow slowly. Use a fridge thermometer to check that the temperature stays around 4 to 5°C. . Food should be kept frozen at -18 degrees Celsius and when thawing, it should be stored in a refrigerator that reaches no more than 5 degrees Celsius until it is ready to be prepared.
Record measurements daily (click here to download our temperature monitoring chart), and if you notice any patterns of temperature fluctuation contact our team for immediate advice – acting quick can be the difference between food contamination and food safety, plus the headache of having to throw out good food due to a faulty refrigerator!
Foods that are often classified as ‘high-risk foods’ in terms of food contamination include – meat, poultry, dairy, seafood, eggs, small goods and cooked rice and pasta. This also refers to ready-to-eat foods that have high-risk foods as ingredients and include – casseroles, quiche, pasta salad, pizza, sandwiches and many cakes.
By keeping these high-risk foods under 5 degrees Celsius it stops them from entering the ‘danger-zone’.
